But we had these amazing olive trees and it seemed a shame to not have them craft an amazing olive oil.

We found beautiful and high quality olive trees on the land. Each year, we would pick their olives, marinate some of them and take some of them to a local olive press to make oil.
We learned a lot along the way, like that how quickly you press the olives after their harvest makes a big difference to the quality of the olive oil.
And although our olives were organic, that wasn't the case with all the olives that went through the local press. So ultimately, our olive oil was not as fresh and high quality as we wanted it to be.
Now we can make sure that the land, trees, olives and people involved are all respected and interacted with from a place of love. Having our own mill means we processes only organic olives. It's on the farm so we can press the olives within minutes of picking them. It doesn't get much better than that.
A HIGH QUALITY ORGANIC OLIVE OIL
The vibrant colour of our olive oil and it’s balanced spicy flavours are reflection of it’s freshness and nutritional value. The blend of local ancient varieties (Galega, Bical, Cobrançosa) found on our domain create a unique palate of berry and creamy almond notes with a delicate and viscous body.
